It was 2014 when the universe did what it does best: it shook things up.

Life took a hard left turn, and I learned the true meaning of the word pivot—long before it became a cultural buzzword.

Change wasn’t just inevitable; it was necessary.

Drawing on my past—years spent owning hot dog carts and a vending machine business—I knew I wanted my next chapter to be about more than just food.

It had to be about connection, creativity, and doing things differently.

The idea of a food truck took root.

But not just any food truck. Not ANOTHER burger truck.

I wanted to build something unique, something that reflected my values and my story. 

Gourmet grilled cheese became my canvas, and an electric-powered, upcycled truck my vehicle—literally and figuratively.

I built it myself, entirely from scratch. 

Using mostly upcycled components.

I poured my heart into every bolt and wire,

determined to create something special. 

At the time, nobody was doing gourmet grilled cheese, and nobody believed an electric-powered food truck could work.

“You can’t do that,” they said.

But I did.

It wasn’t the easy path, but it was mine.

Because of even more personal and professional challenges, it took a couple of years to complete.

We launched in 2018

This truck is more than just a kitchen on wheels—it’s a symbol of resilience. The kitchen runs entirely on electric power (with generators for now), with a dream of one day going fully solar and battery-powered. No propane, no deep fryers—just honest, eco-friendly comfort food that warms the soul.

The road has never been an easy one.

After getting things dialed in..

The pandemic forced me to shut down for the year.

And then, I faced one of the hardest battles of my life: cancer.

But through it all, this truck—and the dream it represents—kept me going. 

Surviving those challenges taught me that life is fragile,

but also incredibly beautiful.

It’s about savoring the simple things,

like the perfect grilled cheese sandwich,

and never giving up on what you believe in.

This truck isn’t just a business; it’s a testament to resilience, reinvention, and the power of a good grilled cheese to bring people together.

Every sandwich we serve is made with love, grit, and a reminder that even when the world says “you can’t,” you can.
